This is a tasty, easy recipe for a seafood pasta salad. It is a great salad to make on a hot summer day. No need to heat up your kitchen and you can make it ahead of time (at least 3-4 hours before serving) because it tastes best served cold. Sometimes it even tastes better the next day because all the flavors have more time to combine together 🙂
Here is the basic recipe, but you can add so many other things to it and it would still taste great. The amount of mayonnaise may need to be changed up based on the type of pasta you make. The longer the salad cools off in the fridge, the more the noodles may soak it up.

Ingredients
- 12 ounces of pasta (about 3 cups)
- 1 medium sized cucumber (peeled and chopped fine)
- 3/4 cup mayonnaise (can go up to 1 cup based on preference)
- 2 Tbsp. lemon juice
- 1 Tbsp. dried dill weed
- 1/4 Tsp. minced garlic
- 12 ounces imitation crab meat or lobster
- 8 ounces fresh snow peas, trimmed or cut crosswise in halves
- 4 plum tomatoes, cut into small pieces
Instructions
- Bring water to boil in a large pot and cook pasta per package directions (until al dente).
- Meanwhile, mix cucumber, mayonnaise, lemon juice, dill weed and garlic in a large bowl until blended.
- Add seafood.
- About 30 seconds before draining the pasta, add the snow peas to pot.
- Pour finished pasta and snow peas into a colander and rinse with very cold water to chill.
- Drain well.
- Add dressing and stir to coat.
- Fold in tomatoes.
