These roasted brussel sprouts with bacon are so easy to put together and make a fantastic side dish to most meals. I promise you will enjoy these and never look at them the same way again!
Ingredients
- 1 1/2 pounds brussel sprouts
- 2-3 Tablespoons olive oil
- 2 garlic cloves, minced
- Salt and Pepper to taste
- 4 bacon slices (or Italian pancetta), cut into 1/2 inch strips
Instructions
- Preheat oven to 400 degrees.
- Rinse brussel sprouts and trim off the tops. Cut the sprouts in half, lengthwise. A lot of the outer leaves will fall off, but put them in with the rest of the sprouts because they bake up crispy and delicious.
- In a medium bowl, combine brussel sprouts, minced garlic and olive oil. Toss to coat.
- Line a cookie sheet with aluminum foil and lightly spray with cooking spray.
- Pour brussel sprouts onto cookie sheet in a single, even layer.
- Sprinkle with salt and pepper and layer the bacon pieces evenly throughout the sprouts.
- Roast in oven for 20-30 minutes. Turn the sprouts halfway through the cooking time to be sure they bake evenly.
- Bake until golden and serve immediately.
