They are more of a banana cake consistency rather than a banana bread. But this works out perfectly. They need to be more dense in order to hold the amazing tasting brown butter frosting that gets spread on top.
They are also great dessert if you are baking for a large amount of people. You can get a lot of squares out of one recipe.
I get asked how to make these all the time, making it another favorite recipe of mine that I had to share.
Ingredients
Bars
- 1 ½ cups sugar
- 1 cup sour cream
- ½ cup butter, softened
- 2 eggs
- 1 ¾ cup (3-4) ripe bananas, mashed
- 2 tsp. vanilla
- 2 cups flour
- 1 tsp. baking soda
- ¾ tsp. salt
- ½ cup chopped walnuts (optional)
Frosting
- ½ cup butter
- 4 cups powdered sugar
- 1 ½ tsp. vanilla
- 3 Tbsp. milk
Instructions
- Heat oven to 375 degrees.
- Grease and flour a 15x18 jelly roll pan (or a cookie sheet with sides).
- In a large bowl, beat together sugar, sour cream, butter and eggs until creamy.
- Blend in bananas and vanilla.
- Add flour, baking soda and salt and blend for one minute. Stir in nuts.
- Spread batter evenly into pan.
- Bake for 20-25 minutes or until golden brown.
Frosting
- Heat butter in a large saucepan over medium heat until boiling.
- Let butter turn a delicate brown and remove from heat immediately.
- Add powdered sugar, vanilla and milk. Whisk together until smooth.
- It will be thicker than a glaze but thinner than a frosting.
- Spread on warm bars with spatula.
