Meatloaf is one of my favorite comfort foods. This recipe has a lot of different ingredients, which come together to give the meatloaf an amazing (almost a tad sweet!) flavor. And the bacon on top makes this recipe an all around winner in my book….I mean is there anything that is NOT better with bacon?! 🙂
Start checking the internal temperature of the meatloaf when it has been baking for about 50 minutes. Since oven temperatures vary, mine took 60 minutes total. You also want to make sure the bacon on top gets cooked and a little crispy too. Let the meatloaf rest for at least 15-20 minutes after taking it out of the oven. If you try to cut it right away, it will not slice easily and fall apart.
Ingredients
- 1 pound ground beef
- 1/2 small green pepper (chopped fine)
- 1/2 small onion (chopped fine)
- 3 TBSP of Ketchup
- 3 TBSP of Original Sweet Baby Ray’s BBQ Sauce (or your favorite)
- 1 Roll of Ritz crackers
- 1/2 cup Italian Bread Crumbs
- 1 egg
- 3 TBSP brown sugar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. seasoning salt
- 1/4 tsp. paprika
- 1/4 tsp. onion powder
- 1/4 tsp. garlic powder
- 6-8 slices of bacon
Instructions
- Preheat oven to 350 degrees.
- Mix all ingredients (besides the bacon) in a medium mixing bowl.
- Place mixture in a greased 9x5 loaf pan.
- Put a small layer of ketchup on top.
- Layer the bacon on top of the ketchup.
- Bake for 60 minutes or until the middle is at least 160 degrees.
