I made these baseball cookies to put in treat bags for my son’s birthday party. Time was of the essence, so I took a big shortcut (shhh!) and used special edition white chocolate covered Oreos for the cookies.
Hey, it’s the thought that counts, right?! My only recommendation is if you know ahead of time you want to make these cookies, buy them at the holidays (Thanksgiving and Christmas) because they are only sold around then.
If you are feeling ambitious and want to cover plain Oreo cookies with your own melted white chocolate, Wilton sells great cookie molds with different designs that you can use. I am a huge Wilton fan (I literally have bins full of their good stuff!) and use their baking products all the time. If you do choose to melt and cover the cookies on your own, I highly recommend their Candy Melts. They come in any color you could possibly want and it is much easier to use the pre-colored melts than try to color it on your own.
I mixed up a small batch of icing that I piped on using a sandwich bag. Using sandwich bags to pipe with is another shortcut that I use all the time. It works great if you don’t have a lot to decorate and makes clean up SO easy!!
This is usually a glaze icing that I use on sugar cookies, but I adjusted the ingredients so that it is much thicker and didn’t run down the cookies.
Mix together in a medium bowl:
1 cup powdered sugar
1 tsp. corn syrup
3 Tbsp. water
1/4 tsp. vanilla or almond extract
Wilton Gel Food Coloring (color of your choice)
Check the consistency after mixing the above ingredients together. If the mixture is too thick, slowly add a small amount of water at a time. Too thin? Slowly add a little more powdered sugar. When you run your spoon across the bottom to “cut the mixture in half”, it should take at least 5 seconds to re-cover the bottom of the bowl. Another test is to put a scoop of the icing in a sandwich bag. Cut a small hole in the tip of the bag. If you are able to squeeze a line of the icing without it running, you have a good consistency to decorate these cookies.
I piped the two curved lines on both sides of the cookies first. Once that dried a bit, I piped on the laces.
I left the cookies out overnight to be sure the icing dried before bagging them (cover them loosely overnight). I used the Wilton Clear Treat Bags and tied them closed with red ribbon. Here is a picture of my finished product! I got a lot of compliments on them and no one needed to know how easy they were to make. Well, I guess my secret is out now 😉
